The Perfect Summertime Salad!

This salad screams SUMMER! It is also paired with all of my most treasured things to snack + nibble on. I can’t get enough of it! I could eat it for breakfast, lunch and dinner! It is simply delicious and

  • 4 mini cucumbers OR 1 large English cucumber
  • A small bunch of fresh mint leaves
  • 1 cup of diced OR crumbled feta (I like diced)
  • 3 cups of fresh watermelon with seeds removed
  • Sprinkle of salt (try Maldon)
  • Juice of 1/2 a lemon
  • 1 tablespoon of olive oil
  • 1/2 Cup of chopped pistachio


  1. Using a vegetable peeler, create long strips of thinly peeled cucumber ribbons, place in a large bowl
  2. Roughly chop up mint leaves (you can add more or less, depending on your preference) add to large bowl
  3. Toss in 1 cup of crumbled or diced feta
  4. Chop 3 cups of watermelon (don’t forget to remove all the seeds) and add to bowl
  5. Add a dash of salt
  6. In a separate bowl (small) add the juice of 1/2 a lemon and the tablespoon of olive oil. Mix and drizzle over salad
  7. Gently mix salad, garnish with chopped pistachio nuts and fresh whole mint leaves
  8. Be sure to let the salad rest for 5 minutes then quickly serve!
